Topic: Teal Fricasse

All right, folks, here's one that will make you slap yo momma!

Ingredients

8 teal skinned with the legs and thighs removed intact and the breast meat "filleted". And don't forget the meat around the wishbone! Wing meat is optional.
1/3 cup peanut oil; 1/3 cup flour (Give or take a little)
1 large yellow onion finely chopped
1 tbsp minced garlic
1/2 tbsp white pepper
1/2 tbsp onion salt
bay leaf
water to desired consistency (Don't make a gumbo out of it!)

Directions

On medium heat make a dark roux, then sautee onion, then add garlic just before onion has become opaque. Brown the meat. Add water and seasonings, cover, and simmer for around 1 1/2 hours or until the meat is tender. You may need to add a little water as you go, but keep the gravy gravy and not soup! Serve over rice with a big dab of mayhaw jelly on the side and a glass of cabernet.
Aieeyaaa, this is killing me, especially since there weren't any teal in my spots last September!

Man, I ran out a couple of weeks ago and had to run all over Acadiana to find some more (The Fruit Stand in Breaux Bridge).
I just couldn't eat ducks, geese, or doves without a big dab of mayhaw jelly on the side!  smile Maybe that's what you need to improve your disposition.   emot_stirpot
