I am interested in trying out new areas towards the west. I was wondering if Hebert's is conducive to kayak launching and if it is a good place to start. Thanks.

Fish around the docks near Heberts or head south and fish Commissary point

Commissary Point is just south of Hebert's - where many of the guides launch their boats and go blasting by on their ways south. Also, it gets pretty bouncy there in all winds but due east. And the best water is a fair distance away from the bank.
If you want to fish the east side of Big Lake from a yak, head up Pelican Point Road towards a little bayou that leads to a broad expanse of shallow flats. Big specks often feed on those flats - and no one will go blasting past you there!
And don't neglect the mouth of that little bayou - but don't tell FT I told you so!

West Cove launch in the NWR is a good area for paddle fishing it takes you out to the SW corner of Big Lake. You can also launch at Dugas in Hackberrry and paddle down to the south end of Joe’s/Jobe’s cove. Fishing Commissary point isn’t too hairy but it is on “weir super highway” so you will get boats blowing right by you. Big Trout have been right on the bank in the AM like redfish around commissary moving out to the deeper reefs and ship channel as the day heats up; like at 7:30am!!!! lol
People are still catching nice fish at “blue camp/crab lady,” the flats Pete is mentioning north of Pelican Point. From right past the Pelican Point homes all the way up to the next group of camps at Grand Lake the whole bank area/ marsh cuts, etc. are great out to almost 500yrds off the bank.
I caught a large number of fish on the beach Strate acros from Herberts landing.
After that i followed the birds.
